Last week I decided to make a seasonal whoopie pie. I was rummaging through my recipes for the pumpkin cookie recipe that my mom always used when I had this tug of déjà vu. Then I remembered that I had made her cookie last year and nobody at my house liked it. Bummer. So I decided that I would go in search of a better pumpkin cookie recipe to work with.
As luck would have it, my copy of the Food Network Magazine had just arrived. They, of course, are pushing hard on the Fall/Halloween theme in this issue, which worked in my favor. Right off the bat I spied a recipe for Pumpkin Whoopie Pies. This version is from Gina Neely. I was not thrilled that they were basically a traditional whoopie pie but with pumpkin flavored filling. Turns out, neither were my kids. My oldest wouldn’t even try them until I offered him a dollar. My youngest son asked me if I had put cheese in them. I had to admit, it did look a lot like a grilled cheese filling – LOL! Overall, this recipe turned out to be a bust. The cookies really spread out and became huge and the filling wasn’t that tasty.
So I went back to my original idea of having the whoopie part of the pie be pumpkin flavored. That is when I found this version by Seattle Pastry Girl. I really liked the consistency of her cookie. After the bomb of the earlier version, I took some liberties with the filling though and added marshmallow crème to it. These were awesome! They were gone same day. Need I say more.
