Again, with the chocolate! I can’t seem to help myself. Honestly, this was mostly about playing with recipe for a souffle than anything else. I didn’t have a recipe and wasn’t sure about the technique, so I found one online. I started off with the one from Julia Child, but since I had saved 8 egg whites thinking that I had seen that somewhere before, I kept searching until I found that one again. Turns out it was from Food Network. This was pretty good. At least we ate them. I didn’t get all the egg white incorporated like I should have, so I ended up with each one having a little patch of white in the mix. Overall, I think I got the hang of the technique though. I may play with the seasoning next time around. Because, as we all know, there will be more chocolate in my near future.
